This Mother’s Day, celebrate the spirit of togetherness and tradition by joining us in the kitchen to learn our cherished family recipe for Vietnamese Spring Rolls. Beyond being a culinary delight, these rolls symbolize unity and heritage. In Vietnamese households, preparing spring rolls brings family members together, as they gather in the kitchen to share stories, laughter, and the joy of making this flavourful dish. Below, discover the steps for preparing Vietnamese spring rolls for a party of four.
Ingredients:
- 1 packet of rice paper rolls
- 100g vermicelli rice noodles
- 200g lean pork shoulder
- 3 egg yolks
- 1 small bowl of bean sprouts
- 1 spring onion bulb
- 15g wood ear mushrooms
- ½ carrot
- 50g garlic (finely chopped)
- 50g chili (seed removed and finely chopped)
- 2 tsp fresh lemon juice
- 50ml fish sauce
- Seasoning (sugar, salt and pepper seasoning ground pepper)
Preparation:
1. Prepare the filling
- Mince the pork finely
- Wash the bean sprouts and squeeze out any excess water
- After removing the skin and washing the carrots and onions, chop them into fine strips
- Soak the wood ear mushrooms in warm water for 15 minutes to soften, then wash and chop
- Boil the vermicelli quickly in boiling water until the fibers soften, then use scissors to cut into small pieces
- Combine all ingredients in a large bowl, add 2 egg yolks, 2 tsp of sugar, 1 tsp of seasoning powder, 1 tsp of ground pepper, and mix well. You can adjust the seasoning accordingly. Marinate for 15 minutes so that the filling absorbs the spices
- Spread 1 sheet of rice paper on a cutting board, then use a clean towel dipped in water to wipe the surface of the rice paper to make it soft and easy to roll. Spread 1/2 of the rice paper sheets in the middle to avoid tearing when rolling
- Place a table spoon of filling into the center of rice paper
- Roll tightly, folding the ends
- Seal with egg white
- Repeat until filling is used up
- Heat the oil in a pan on high heat. Use enough oil to cover the spring rolls
- Once boiled, lower the heat and fry for about 3 minutes, turn the rolls, and continue frying until golden brown (approx. 3 more minutes)
- Remove the spring rolls from the pan and place them on a kitchen towel to allow the oil to drain.
- Mix fish sauce, sugar, and water in a 1:1:3 ratio and boil until sugar dissolves
- Add 2 tsp of lemon juice, garlic, chili, and stir
